D-isoforms of arginine and cysteine also inhibit Salmonella in egg white. Salmonella wild-type was grown overnight, diluted to a concentration of 8*103 cells per 1 mL in 50% egg white, mixed with L-arginine, D-arginine, L-cysteine, or D-cysteine to a final concentration of 125 μM, or carrier DDW as a control, and incubated for 24 h at 37°C. Finally, samples were diluted into LB and growth was monitored by a plate reader to determine relative bacterial levels at the end of the 24 h incubation. Shown is the time in minutes till samples reached OD600 = 0.2. Shown are the averages of six sperate experiments. Standard deviation is shown. * p-value<0.05, ** p-value<0.01.
