Species, strains, and sources of 55 bifidobacteria examined for the ability to ferment glucose, FOS, and inulin. Optical density (OD600) and pH were measured after a 48-h incubation in SM containing 10 g liter−1 glucose, FOS, or inulin as the sole carbon source. The results are mean values from three separate experiments (standard deviations were always less than 0.27 for OD600 and 0.15 for pH).
