Here the Gibbs free energy for the unfolding transition is given by ΔGunf(T) = GUGF = ΔH(T) − T × ΔS(T) = ΔHm (1 − T/Tm) + Δcp [TTmT × ln(T/Tm)] with the melting temperature Tm = 103°C, the enthalpy change ΔHm = 2686 kJ mol−1, and the change in heat capacity Δcp = 32.74 kJ mol−1 K−1 (Fitter, unpublished results; Feller et al., 1999).
