The ratios of phytase activity at different pH pairs are expressed as mean ± standard error (n = 3 to 6). The buffer conditions were as follows: pH 5.5, 0.2 M citrate; pH 3.5, 0.2 M glycine-HCl; pH 2.5, 0.2 M glycine-HCl. An asterisk indicates a difference (P < 0.05) from the WT. NA, not applicable.
