Two separate measurements of the τR of CP in pea axes at 0.07 g/g are shown in A to indicate the reproducibility of the ST-EPR measurements. Aging rates were taken from ref. 10. The arrows indicate the onset Tg as measured by differential scanning calorimetry, obtained from ref. 24, using a scanning rate of 10°C min−1.
