Reaction catalyzed by FAOX. FAOX catalyzes the oxidation of the C-N bond between the nitrogen of the amino portion of the fructosamines and C1 of the fructosyl moiety. The resulting Schiff base is readily hydrolyzed to glucosone and an amino acid. After the catalytic cycle, the reduced FAD is oxidized by molecular oxygen with concomitant release of hydrogen peroxide.
