Speciation was carried out by partial 16S rDNA gene sequencing. All sequences were greater than 99% similar reference sequences at the Human Oral Microbiome Database (www.homd.org).

Substrates (final concentration 200 µM) were mixed with bacterial suspensions in saliva ion buffer (OD620 1.2). Hydrolysis was measured spectrophotometrically at 405 nm after 24 h incubation.
