Enzyme maceration activity in banana tissue. 1 unit of purified enzyme mixed with 1 ml of 50 mM sodium acetate buffer pH 5.0 was inoculated with sterilized banana tissues, and maceration was evaluated after 48 h at 45°C. Control tubes contained the same buffer without enzyme. The reducing sugar content was determined by the method of Somogyi [18] in three replicates. (Guangfen-1: Musa AAB cv.
