SDS-PAGE protein profiles for IRMM-481f peanut mix and 16 min baked cookie incurred with 100,000 μg IRMM-481f peanut mix g−1 matrix. The different band numbers were submitted to trypsin digestion and peptides submitted to nano LC-Q-TOF-MS/MS for protein identification. The list of peptides and identified proteins are presented in Table 3. Five micrograms protein was loaded per lane. A molecular weight standard (MW) of 3.5–260 kDa was run in parallel.
