First, water droplets are sheared by the continuous phase consisting of DOPC/oleic acid which enter the junction from the top and bottom channels. Then, this stream is sheared by a stream composed of an ethanol solution which arrives at the second junction from the top and bottom channels. Images were captured with the Photron Fastcam.
