The loss of balance between anti-inflammatory and proinflammatory mediators may precipitate neoplastic transformation in the intestinal epithelium. Whereas this balance in the inflammation is likely to be influenced by several factors including genes, inflammatory insults, and dietary habits, bioactive components in food are critical in maintaining the inflammatory balance and thus determine the increased or decreased colon cancer risk.
