Starch granules were incubated with thermolysin at a concentration of 0.4 μg mg⁻¹ in 5 mm CaCl₂. Hydrolysis was conducted at 64 or 50°C for 4 h. The granules were washed five times with water to remove residual thermolysin and then air dried. Control starches were treated in parallel at each temperature with thermolysin omitted.
