Effect of cooling rate on DPPC bilayers in water. All samples were prepared by incubation with DPPC liposome solution in water at 60 °C and incubation for 5min followed by cooling to room temperature at (A) 5 °Cmin⁻¹ ; (B) 1 °Cmin⁻¹ ; (C) 0.5 °Cmin⁻¹ . The region enclosed by the blue box has been enlarged and is shown below. For this image of DPPC at room temperature, we see three different types of domains with the lowest two being 1.1 nm and 0.6 nm below the upper domain.
