Why fruit juice (pH 2.8) is an alkali load and protein is an acid load. 1 L of orange juice (pH 2.8) contains 1.5 mmol H+. It also contains enough organic acids to produce ≈30 mmol HCO3 by conversion in both the liver and the kidney. 1 kg of meat causes the production of 80 mmol H+ from conversion of AA-SH.
