Degradation of granular wheat starch over time by M. aurum B8.A culture fluid, MaAmyA, and truncated MaAmyA enzymes. To each reaction mixture, 300 U of enzyme (CNPG3 assay) was added. His-tag-purified empty vector E. coli extract was added as a negative control. The total carbohydrate concentration in the supernatant was determined by the anthrone method, and the percentage of granular starch degraded was calculated.
