Storage (elastic) and loss (viscous) components of the complex shear modulus μ^* = μ′ + iμ″ of turkey breast (N=33, 30–40 Hz) measured by direct mechanical testing (DST). The ratio of the storage moduli was ${\mu }_{\Vert }^{\prime }/{\mu }_{\perp }^{\prime }=1.5\pm 0.3$, the ratio of the loss moduli was ${\mu }_{\Vert }^{″}/{\mu }_{\perp }^{″}=2.0\pm 0.3$, and the ratio of the magnitudes was μ_||/μ_⊥ = 1.6 ± 0.3 (ϕ = 0.6 ± 0.3).
