Biosynthesis of allicin from alliin (adapted from Ref. 17). Upon damage of garlic clove cells, alliin comes into contact with alliinase. Alliin is converted to allyl sulfenic acid and dihydroalanine. The latter is unstable and rapidly degrades to pyruvate and ammonia. Two molecules of allyl sulfenic acid spontaneously condense to allicin.
