The desaturation index (MUFAs/SFAs) was calculated for C16:1/C16:0 and C18:1n-9/C18:0 from the results shown in Fig. 3. Values are the mean ± SD of triplicate experiments (C16:1/C16:0, p<0.0001; C18:1n-9/C18:0, p=0.0124; C18:1n-7/C18:0, p=0.0008, Jonckheere-Terpstra test). MUFAs, monounsaturated fatty acids; SFA, saturated fatty acid; ECP, extracts of chickpeas.
