FTIR (Fourier transform infrared spectroscopy) water band ratio changes as a function of hydration. Three zones can be observed which correspond to: 1, high energy bonding of water to the protein; 2, steady medium rate of hydrogen bonding of water to the protein network; and 3, slow hydration rate of poly-molecular layer water to the modified network [54].
