FT-IR spectra of B. napus cruciferin and napin. Inset: Secondary structure analysis using amide I region (1600–1690 cm⁻¹) Fourier Self Deconvolution (FSD) of amide 1 peak shows secondary structure components and assignment of peaks of the deconvoluted spectra. Deconvolution parameters for cruciferin: Resolution enhancement factor (K) = 2.5, Full width at half height (FWHH) = 14 cm⁻¹ and Apodization filter = Bessel.
