CBP21 activity at varying concentrations of ascorbic acid. Time course reactions were monitored for the degradation of 10 mg/mL β‐chitin by 1.0 µM CBP21 in the presence of ascorbate concentrations ranging from 0.5 to 10 mM as indicated in the graph inset.
