Chemical structure of chitin/chitosan. The index n represents the number of repeat units of glucosamine in the chain and m the number of repeat units of acetyl-glucosamine in the chain (n + m indicating the degree of polymerization and m/n + m being the degree of acetylation). When n is more than 50%, the polymer is called chitosan. Content of NH2 increases its reactivity [16, 25].
