Respiration rate of sugarbeet roots during 60 days of storage. Freshly harvested roots were stored for 10 days at 10°C and 90 ± 5% relative humidity (RH), then stored at 4°C, 90 ± 5% RH for 50 days. Respiration rate of individual roots was measured as CO2 produced at 10°C per kg fresh weight per hour. For measurements at 30 and 60 days, roots were equilibrated for 2 days at 10°C prior to measurement. Error bars are ±1 standard error of the mean, where n = 7. Asterisks denote data that are significantly different from the initial respiration rate, with α = 0.05.
