Deglycosylation of oleuropein detected on polyacrylamide gels. Zymograms were developed using MUGlc or oleuropein as substrates. Purified almond β-glucosidase (10 μg) was either non-heat or heat treated, resolved on 10% SDS-PAGE, and developed with 1.5 mm MUGlc (A) or 3 mm oleuropein (B). Proteins extracted from olive mesocarp (2.5 μg) or tobacco plants infiltrated with empty vector (25 μg), or expressing OeGLU (25 μg), were resolved on 7% SDS-PAGE and developed with 1.5 mm oleuropein (C).
