Overview of the reaction scheme. RgNanH hydrolyses α2,3-linked-Neu5Ac on fetuin, releasing 2,7-anhydro-Neu5Ac as the major product but also Neu5Ac. Neu5Ac is further degraded into N-acetylmannosamine (ManNAc) and pyruvate by a sialic acid aldolase, which is inactive against 2,7-anhydro-Neu5Ac.
