Table 3.

Bacterial species producing DMS and TMA were found and identified from the raw oysters with losing their freshness. The 16S rRNA genome of complex microbiomes in raw oyster used in this study was determined by the duplicate samples prepared from the soup of oyster at 4 days post-harvest. Among the total reads (248,615), 94.67% and 72.89% were classified to genus and species level, respectively.
