Characterization of process windows for thermal preservation (pasteurization and sterilization) with respective wanted microbial and unwanted biochemical effects with milk as the model system, as modified from Kessler (14). Process windows above 1 s belong to conventional treatments and process windows below 1 s (ultra-short pasteurization and ultra-short sterilization) can be used as new treatments based on micro structured reaction systems.
