Sensory ratings for confection/dessert-associated aromas. Ratings for a given flavorant are in rows, and ratings for a given sensory attribute (sweetness, bitterness, pleasantness) are in columns. For sweetness and bitterness, the secondary y-axis shows the position of labeled magnitude scale descriptors: BD = “barely detectable,” W = “weak,” and M = “moderate.” Values for sweetness and pleasantness are geometric means, since analyses were performed on log-transformed values. Thus, positive and negative error bars (± sem) can be asymmetric for sweetness and bitterness.
