Sedimentation velocity, ls-g*s(s) and c(s) analyses showing the sedimentation coefficient distributions for whole US saliva (blue line) and what happens upon the addition of epigallocatechin gallate (EGCG) (green line). When 0.5 mg/mL EGCG was added to US saliva, the amylase concentration was reduced. This confirmed the interaction between EGCG and human salivary α-amylase.
