Structure and biochemical properties of γ‐oryzanol. γ‐Oryzanol is a functional component specifically and abundantly contained in brown rice. Structurally, γ‐oryzanol is a ferulic acid ester compound of several kinds of triterpene alcohol and phytosterol. Chemical properties of γ‐oryzanol are beneficial for its stable central action.
