Absorbance spectrum in the UV‐visible range of amaranth extracts taken from leaves of pigmented wild‐type and unpigmented VIGS Amaranthus tricolor plants. Using a spectrophotometer, absorbance was measured in aqueous extracts from 280–730 nm at 1‐nm resolution. Untreated A. tricolor ‘Red Leaf’ showed an absorbance maximum in the red range at 536 nm, but no detectable peak in the yellow range at 470–480 nm. However, extract from commercial beetroot had detectable peaks at both 536 nm and 480 nm. Data shown are representatives of two replicates. Green leaves from VIGS‐treated A. tricolor ‘Red Leaf’, or from a green accession of A. tricolor did not show absorbance at either 536 nm or 480 nm.
