Effect of pinocembrin concentration in insulin glycation kinetics. Insulin samples were incubated at 37 °C with 0.5 M d-ribose (InsRib) or 0.5 mM methylglyoxal (InsMG) at different concentrations of pinocembrin (0, 0.1, 1, 10, and 20 mM) and AGE fluorescence (λex 320 nm/λem 410 nm) was monitored after 7 days of incubation.
