Conversion of glucosinolates into isothiocyanates and other various volatile breakdown products, depending on reaction conditions. Characteristic glucosinolates and breakdown products in horseradish include: R1 = allyl (glucosinolate: sinigrin, specific decomposition products: allyl isothiocyanate, allyl thiocyanate and allyl nitrile); R1 = 2-phenylethyl- (= phenethyl-) (glucosinolate gluconasturtiin, specific decomposition products: 2-phenylethyl-isothiocyanate, 2-phenylethyl-thiocyanate and 3-phenylpropionitrile) [2,3,4,5].
