Color values L* (A), a* (B), and b* (C) of burger patties incorporating prickly pear extract (PPE) and encapsulated prickly pear extract (Encaps-PPE). Controls were made incorporating sterile distilled water (SDW) or encapsulated sterile distilled water (Encaps-SDW).
