(A) Inhibitory effect of the DMSO extract of fermented Jabara (FB) on β-hex release from mast cells. IgE-sensitized mast cells (1.0 × 105 cells / well) were preincubated with each extract (200 ug/mL) at 37 °C for 15 min prior to 30 min stimulation with DNP-HSA. Data are presented as mean (SD). Solid and dashed lines: Amount of 5-HMF (mM) and Narirutin (mM) in Jabara, respectively, determined on different days of fermentation by HPLC analysis. (B) Inhibitory effect of 5-HMF on β-hex release from mast cells. IgE-sensitized mast cells (1.0 × 105 cells/well) were preincubated with each extract at 37 °C for 15 min prior to 30 min stimulation with DNP-HSA. Results represent one trial.
