Survival of Salmonella wild-type (WT) strains and Tn5 mutant libraries on in-shell pistachios. Pistachios were inoculated, dried and stored, and populations of Salmonella were enumerated as described in section “Materials and Methods” immediately after inoculation, after drying, and periodically during storage. Data represent averages from three independent trials with duplicate samples per trial. Error bars indicate standard deviation (n = 6). Enumerations of S. Newport C4.2 on pistachios were discontinued when the population was less than 6 log CFU/g.
