Distribution of the nitrogen content between soluble and insoluble fraction after gastric and intestinal digestion. Digests were centrifuged at 5000 × g for 20 min. Supernatant and pellet were freeze-dried and weighted. Nitrogen content in each fraction was determined by a) elemental analysis and b) amino acid analysis. Total and free amino acids were separately determined in the soluble fraction.
