Distribution of the nitrogen content between soluble and insoluble fraction after gastric and intestinal digestion. Digests were centrifuged at 5000 × g for 20 min. Supernatant and pellet were freeze-dried and weighted. Nitrogen content in each fraction was determined by a) elemental analysis and b) amino acid analysis.
