GSE modifies the bacteria content, but bacteria are involved to digest poly and oligomers of polyphenols present in GSE into active monomers with antioxidant activity. The change in the microbial/(poly)phenols environment decreased lipolysis and adipose tissue and improved intestine homeostasis and the antioxidant status.
