MALDI-TOF analysis to determine dehydrations and (methyl)-lanthionine ring formations. (A) MS spectra of nisin H, threated with CDAP. Dominant species was eightfold dehydrated. (B) MS spectra of nisin H F₁I variant, threated with CDAP. Dominant species was ninefold dehydrated. Both variants showed no coupling products, indicating that all cysteine residues were involved in (methyl)-lanthionine rings.
