Miraculin interacts with sweet taste receptors TAS1R2 and TAS1R3 in the oral cavity and at the gastrointestinal (GI) level. The intracellular signaling pathways stimulate the taste receptors downstream under acidic conditions. Miraculin may contribute to the regulation of GI motility and the secretion of enterohormones (leptin, ghrelin, insulin, GLP-1, and endocannabinoids).
