Evaluation of total polyphenols content in the extract at the end of gastric and duodenal digestion. Values are given as the amount of polyphenols in the undigested extract (baseline) and in the soluble extract released during in vitro gastric and gastric + duodenal digestion. Values represent averages (±SD) of triplicate measurements. RSD was always <10%. Statistically significant differences were observed (Friedman’s test followed by post hoc comparison with one-tailed Dunnett’s test) and are characterized by the * symbol.
