Conditions: 0.05 g/L pure enzyme, 0.0064 g/L HRP, 880 U/mL Catalase, 100 mM NaPi, 100 g/L Crude HMF in DEC (BASF), 200 µL (80% of aqueous volume) DEC, 20 °C, 6 and 24 h. Over-oxidation in all samples was found to be <0.3%.
