Table 1.

Bacteria (%) identified (by 16S rRNA gene sequencing of colonies) from three different processing plants, one day after slaughtering and filleting. At Plant 1 samples were taken from both the skin and from the flesh (fillet). Plant 2 and 3 were industrial processing plants with sampling of the fillets.
