Ultraviolet-visible spectra of casein in the absence and presence of curcumin at 298 K at pH 7.4 (A) and pH 2.0 (B). The curcumin concentrations in curves 1–6 were 0 × 10⁻⁶, 2 × 10⁻⁶, 4 × 10⁻⁶, 6 × 10⁻⁶, 8 × 10⁻⁶, and 10 × 10⁻⁶ mol/L. Casein concentration was 0.2 g/L.
