Concentrations (in µg L⁻¹) of VSCs in Chardonnay wines made with the parent AWRI796 and five variants carrying mutations in Aro4p (AWRI2965) or Tyr1p (AWRI2936, 2940, 4124, and 2969) at two different time points during wine storage. The results are expressed as the mean and standard deviation of three independent replicates. ANOVAs were conducted separately for each time point. Means with the same letters are not significantly different from each other (Tukey’s test, alpha = 0.05). Concentrations of MeSAc at the 15 month time point were below the limit of quantification of the technique (<5 µg L⁻¹).
