Relative abundances of bacteria (a) and fungi (b), based on 16S rRNA and ITS gene sequences, respectively, in the ganjang during fermentation. Absolute abundances of bacteria (c) and fungi (d) were estimated by multiplying the relative bacterial and fungal abundances by the mean values of the 16S rRNA and ITS gene copies, respectively, shown in Fig. S1B. Bacterial (e) and fungal (f) communities in the raw materials (meju bricks and solar salts) used for the ganjang preparation and those in the meju bricks removed from the ganjang solution after 60 days were also analyzed. “Others” comprises bacterial or fungal genera with <3.0% prevalence in all samples.
