A schematic of the development of ovine gastric and intestinal organoids for studying host-pathogen interactions. Stem cells isolated from sheep ileum crypts and abomasum gastric glands can be cultivated into tissue-specific organoids when grown in a three-dimensional culture system. Gastric and intestinal organoids can be co-cultured with pathogens to model host-parasite interactions in physiologically and biologically-relevant in vitro culture systems.
