The table compares values of cellulose and water content, gastric volume achieved by the recommended daily intake, and ranges of elastic modulus G′ as measured in vitro in SGF and SIF.

*Water and cellulose contents in vegetables are taken from the literature11,37,38.

**Volume of vegetables is estimated based on the daily recommended amount (375 g) by the American Heart Association39, while the volume of CB-SAHs is calculated based on the daily dose (4.5 g) of a CB-SAH product (Gelesis100) according to its use in clinical setting40.
