The process of lipid peroxidation (individual phases and the proposed involvement of antioxidants in combating this process). Lipid peroxidation phases: initiation, where the unsaturated fatty acid reacts with a radical-generating initiator; propagation, where the radical reacts with other fatty acids to propagate as a chain reaction; and termination, with highly concentrated radicals interacting with each other to obtain non-radical compounds. Hydrophilic compounds also play a role in inhibition of this process.
