White bars correspond to control samples whilst light grey and dark cyan correspond to samples incubated with AAPH in the absence (PB) or presence (D60) of dextran. To minimize variations arising from protein hydrolysis, the data are normalized to the numbers of moles of Val quantified in each sample (as this residue is not target by ROO•) and then expressed as moles of residue per mole of protein. Data represent the means ± standard deviations of at least three independent experiments. Asterisks indicates data significantly (p < 0.05) different to the control samples.
